Recipe Title: Roasted Sticky Chicken

Ingredients: 4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 onion, peeled
1 large roasting chicken -- as big as you can find
 
Directions: 1. In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels.

2. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight.

3. Preheat oven to 250 degrees. Put onion into the cavity of the chicken. Place chicken in a shallow roasting pan. Bake for 5 hours. After the first hour, baste every 30 minutes.

4. Let chicken rest for 10 minutes before carving.
 
Notes: The seasoning makes the skin turn a very dark color. Don't worry, it is not burning. Think of it as "blackened chicken". This is probably my son's favorite chicken dish.
