Ingredients: 1 Tbsp. butter, melted
4 fresh or frozen fish fillets (6 ounces, each) thawed (I used grouper)
2 Tbsp. lemon juice
Pinch pepper
1 garlic clove, minced
1 Tbsp. olive or vegetable oil
1 1/2 cups broccoli florets
1 cup cauliflower
1 cup julienned carrots
1 cup sliced fresh mushrooms
1/2 cup sliced celery
1/4 tsp. dried basil
1/4 tsp. salt
1/4 cup grated Parmesan cheese
Directions: Place butter in a 13 x 9 x 2 inch baking dish; add fish and turn to coat. Sprinkle with lemon juice and pepper. Bake, uncovered, at 450 degrees for 5 minutes. Meanwhile, in a large skillet, over medium heat, saute garlic in oil. Add the next seven ingredients; stir-fry until vegetables are crisp-tender, about 2-3 minutes. Spoon over the fish; sprinkle with cheese. Bake, uncovered, at 450 degrees for another 3-5 minutes or until fish flakes easily with a fork.
Notes: This is a simple meal to make. I found a "ready to serve" bag of broccoli and cauliflower at Wal-mart. You can also find fresh mushroom slices and julienned carrots at Wal-mart. This saves even more time. This is a very tasty dish for the seafood lover in your family.
