Recipe Title: Fried Mozzarella Sticks

Ingredients: 1 (16 oz.) Canola vegetable oil
1 lb. Mozzarella cheese, cut into 2 inch strips
1/2 c. flour
2 eggs
2 tbsp. milk
1 1/4 c. "Panko" bread crumbs by Kikkoman
 
Directions: Cut cheese rolls into small sections, a couple inches or so.
Roll cheese sticks in the flour until well coated.
In shallow bowl, beat eggs with a little milk added.
In another shallow bowl, combine bread crumbs with some parsley flakes and stir with a fork.
Dip the flour-coated mozzarella in the egg/milk mixture until well coated.
Then place it straight into the seasoned bread crumbs.
Pat it gently to make sure it’s all coated with crumbs, then gently remove from the crumbs.
Place the tray, uncovered, directly into the freezer for 20 to 30 minutes. This will flash freeze the mozzarella sticks (at least partly), which will help them stay together better when it’s time to fry. It'll also keep the mozzarella from melting too quickly when it hits the hot oil.
When you’re ready to fry the cheese sticks, heat a good inch to an inch-and-a-half of Canola oil over medium heat. Medium high or high can be a little too hot for Panko crumbs. For me, medium is just about right.
They'll cook rather quickly, so be ready to roll them over to the other side when the first side gets brown. The tricky part of making these is getting the oil to just the right temp in order to melt the cheese without burning the crumbs, but you'll be able to gauge this fair easily.
When they’re nice and golden, remove them to a paper towel-lined plate.
Serve with your favorite pizza or Marinara sauce for dipping.
