2 tablespoons olive oil
1 medium sweet onion, diced

1/4 teaspoon fresh ground black pepper
1 (16 oz.) box vermicelli pasta
4 tablespoons Parmesan cheese |

In a large skillet or chicken fryer, heat oil over medium-high heat. Saute onion and garlic for 3 minutes. Add sliced squash and zucchini and saute for 3 minutes. Add diced peppers and tomato wedges. Notes:
|
Feel free to adjust seasonings and cheese to your liking. I added more chili pepper, salt and pepper to mine. I also added more Parmesan cheese. I couldn't find vermicelli so I used thin spaghetti. I used some frozen vegetables I had in my freezer, and it turned out great! |
