Ingredients:

1 lb. ground beef
½ cup fine dry bread crumbs
¼ cup milk
2 Tbsp. chopped onion
1 tsp. salt
1 tsp. Worcestershire sauce
2 Tbsp. oil
2 cups cooked rice
½ cup thinly sliced celery
½ cup finely chopped green pepper
1 can cream of mushroom soup
1/3 cup water
½ cup shredded cheddar cheese
paprika, optional
parsley, optional |

Directions:

Combine beef, bread crumbs, milk, onion, salt, and Worcestershire sauce; shape into 1-½ inch balls. Brown meatballs in oil; place in a 2 qt. casserole dish. Mix rice, celery, green pepper, soup and water; pour over meatballs. Bake, covered, at 350° for 40-45 minutes. Uncover; top with cheese. Bake five minutes longer or until cheese is melted and lightly browned. Sprinkle with paprika and garnish with parsley, if desired. |
