Ingredients:

3 TBS Butter (no substitutes)
Butter to grease pan
1 1/2 cup Sugar
1 cup Water
1 cup Light Corn Syrup
1 can (10 oz.) Nuts (peanuts or cashews)
1 tsp Vanilla Extract
1-1/2 tsp Baking Soda |

Directions:

Thoroughly grease a baking sheet or cookie sheet and a metal spatula. Combine sugar, water and corn syrup in a large heavy saucepan.
Cook over medium high heat (stirring often) until the mixture reaches 270° on the candy thermometer. Add nuts and continue cooking, stirring, until thermometer reaches 300°.
Remove from the heat and add the butter and Vanilla and stir until the butter is melted and blended in.
Add the soda and stir rapidly until well blended then quickly pour the mixture into the cookie sheet.
Spread with a buttered metal spatula.
Let the candy completely cool and then break up with a heavy wood spoon or other object of your choice.
If you turn it over it may just dump out but you may have to help it a little. This recipe will make about 1-1/2 pounds of candy.
The only thing left is to eat and enjoy. |
