Key Lime Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg plus 1 egg yolk
- 1-3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup fresh key lime juice
- 2 teaspoons grated lime zest
- powdered sugar for dusting
Directions
Heat oven 350 degrees line cookie sheets with parchment paper.
In a small bowl whisk together flour, baking powder and salt; set aside. In a large bowl mix the butter and sugar until light and fluffy. Add egg and mixture until creamy. Alternating with the flour mixture and the lime juice, add to the butter-egg mixture and beat until well mixed. Refrigerate for about one hour to firm up the dough.

Notes
I use a one-inch cookie scoop, but you can use a teaspoon to measure the dough to form about one inch balls. Drop onto cookie sheet two inches apart, the cookies will flatten out. bake 12 to 14 minutes, until lightly brown around the edges. Cool in pan 2 minutes and then transfer to wire rack. Dust with powdered sugar while still warm. Cool completely.
