Leftover Oatmeal Muffins
Ingredients
- 1 ½ c. flour
- 3 T. sugar
- 4 t. baking powder
- ½ t. salt
- ½ c. milk
- 1 egg, well beaten
- 2 T. butter, melted or 2 T. oil
- 1 c. cooked oatmeal (more or less)
Directions
Preheat oven to 400. Spray muffin pans.
Combine dry ingredients in small bowl.
In separate bowl, stir the egg, milk and butter into the oatmeal.
Combine the 2 mixtures and mix well.
Spoon into muffin cups 2/3 full.
Bake about 20 min. or until a toothpick comes out dry.
Makes 12 medium muffins.

Notes
The way I made it:
I used ww pastry flour
I used Sucanat instead of sugar
I also substituted 1 mashed banana instead of the egg .
Also, my cooked oatmeal had raisins and cinnamon in it, although you couldn’t taste the cinnamon.
The oatmeal was also lightly sweetened with Sucanat.
